My version of minestrone…

1 onion
1 leek
2 sticks celery
2 carrots
2 T oil
8 cups homemade vegetable stock
1 tin tomato puree
1 tin chopped tomato
1/2 cup chopped green beans
1/2 cup broad beans
1/4 cup red lentils
1 tin kidney beans
1 C pasta shapes
2 t minced chili

Finely chop onion, leek, celery and carrots and add to the oil in a large pot. Cook until tender and add the vegetable stock and tomato puree. Bring to the boil and add the rest of the ingredients. Simmer for 20 minutes or until lentils are tender. Season to taste and serve with warm crusty bread.
